Classic Yam Cake Recipe

Ingredients:

500g yam, peeled and diced
150g rice flour
50g cornstarch
500ml water
3 dried shiitake mushrooms, soaked and diced
2 Chinese sausages, diced
2 tbsp dried shrimp, soaked and chopped
2 cloves garlic, minced
2 shallots, sliced
1 tbsp soy sauce
1 tsp salt
1/2 tsp sugar
1/4 tsp white pepper

Steps:

Steam yam until soft, then mash it.
Mix rice flour, cornstarch, and water in a bowl to form a smooth batter.
Heat oil in a pan and sauté garlic and shallots until fragrant.
Add in dried shrimp, Chinese sausages, and mushrooms. Stir-fry until cooked.
Combine mashed yam, sautéed ingredients, and rice flour batter in a pot. Cook over low heat until mixture thickens.
Pour mixture into a greased pan and steam for 45 minutes.
Let cool, then cut into squares and serve with soy sauce, chili sauce, or hoisin sauce.

Yam Cake with Crispy Pork Belly

Ingredients:

500g yam, peeled and diced
150g rice flour
50g cornstarch
500ml water
200g crispy pork belly, sliced
3 dried shiitake mushrooms, soaked and diced
2 cloves garlic, minced
2 shallots, sliced
1 tbsp oyster sauce
1 tsp salt
1/2 tsp sugar
1/4 tsp white pepper

Steps:

Follow steps 1-5 from the classic yam cake recipe above.
Top steamed yam cake with sliced crispy pork belly.
Heat oil in a pan and sauté garlic and shallots until fragrant.
Add in dried mushrooms and oyster sauce. Stir-fry until cooked.
Pour sauce over yam cake and serve hot.
