Ginger Beer Recipe with Honey

Ingredients:

– 1 cup grated ginger
– 1 cup honey
– 1 gallon filtered water
– 1/2 cup fresh lemon juice
– 1/4 cup active dry yeast
– 1/4 tsp sea salt

Steps:

1. In a large pot, bring the water to a boil.
2. Add the grated ginger and simmer for 10 minutes.
3. Remove from heat and let the ginger steep for an additional 30 minutes.
4. Strain the ginger from the water and return the liquid to the pot.
5. Stir in the honey, lemon juice, and sea salt until well combined.
6. Allow the mixture to cool to room temperature.
7. Once cooled, sprinkle the yeast over the top and cover with a clean towel.
8. Let the mixture ferment for 24-48 hours in a warm, dark place.
9. Strain the mixture through a fine mesh sieve and transfer to glass bottles.
10. Seal the bottles tightly and refrigerate for at least 24 hours before serving.
