Classic Cashew Chicken

Ingredients:

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
1/2 cup cashew nuts
1/4 cup soy sauce
2 cloves garlic, minced
1 red bell pepper, sliced
1 onion, sliced
1 tablespoon cornstarch
1/4 cup chicken broth
2 tablespoons vegetable oil

Instructions:

In a small bowl, mix soy sauce, garlic, and cornstarch. Set aside.
Heat oil in a large skillet over medium-high heat. Add chicken and cook until browned.
Add bell pepper and onion to the skillet and cook for 5 minutes.
Pour in chicken broth and soy sauce mixture. Cook until sauce thickens.
Stir in cashew nuts and cook for an additional 2 minutes.
Serve over rice and enjoy!

1 red chili, sliced
1 bell pepper, sliced
1 tablespoon cornstarch
1/4 cup chicken broth
2 tablespoons vegetable oil

Instructions:

Add bell pepper to the wok and stir-fry for 2 minutes.
