Classic Taco Salad with Ground Beef

Ingredients:

1 lb ground beef
1 packet taco seasoning
1 head lettuce, chopped
1 cup cherry tomatoes, halved
1 cup shredded cheddar cheese
1/2 cup diced red onion
1/2 cup sliced black olives
1/2 cup sour cream
1/4 cup salsa
Tortilla chips for serving

Directions:

In a skillet, cook the ground beef over medium heat until browned. Add the taco seasoning and stir to combine.
In a large bowl, combine the lettuce, cherry tomatoes, cheddar cheese, red onion, and black olives.
Top the salad with the cooked ground beef.
Drizzle the sour cream and salsa over the top.
Serve with tortilla chips on the side.

Mexican Street Corn Salad with Ground Beef

Ingredients:

1 lb ground beef
2 cups corn kernels
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup cotija cheese, crumbled
1/4 cup chopped cilantro
1 tsp chili powder
1/2 lime, juiced
Salt and pepper to taste

Directions:

In a skillet, cook the ground beef over medium heat until browned. Set aside.
In a large bowl, combine the corn, mayonnaise, sour cream, cotija cheese, cilantro, chili powder, lime juice, salt, and pepper.
Add the cooked ground beef to the salad and toss to combine.
Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
