Classic Menudo Soup Recipe

Ingredients:

2 lbs beef tripe, cleaned and cut into small pieces
1 onion, chopped
4 cloves garlic, minced
1 can hominy, drained
2 dried guajillo chilies, stemmed and seeded
1 dried ancho chili, stemmed and seeded
1 tsp cumin
Salt and pepper to taste
Chopped cilantro, lime wedges, and sliced radishes for garnish

Instructions:

In a large pot, add the tripe and enough water to cover. Bring to a boil and simmer for 2 hours, or until tripe is tender.
In a separate pot, add the dried chilies and cover with water. Bring to a boil and simmer for 15 minutes, or until chilies are softened. Remove from heat and let cool.
In a blender, combine the softened chilies, onion, garlic, cumin, salt, and pepper. Blend until smooth.
Add the chili mixture to the pot with the tripe. Stir in the hominy and simmer for an additional 30 minutes.
Serve hot, garnished with cilantro, lime wedges, and sliced radishes.

1 tsp paprika
1/2 tsp cayenne pepper

In a large pot, add the tripe and enough water to cover. Bring to a boil and simmer for 2 hours, or until tripe is tender.
In a blender, combine the dried arbol chilies, jalapeno, onion, garlic, paprika, cayenne pepper, salt, and pepper. Blend until smooth.
Add the chili mixture to the pot with the tripe. Stir in the hominy and simmer for an additional 30 minutes.
Serve hot, garnished with fresh cilantro, diced avocado, and lime wedges.
