Classic Mee Soto Chilli Recipe

This traditional mee soto chilli recipe is a staple in Malaysian cuisine, featuring a flavorful broth infused with aromatic spices and herbs.

Ingredients:

Kicap Cili - 酱油辣椒

2 tbsp dried chillies
1 onion, chopped
3 cloves garlic, minced
1 inch ginger, sliced
1 tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder
1 stalk lemongrass, bruised
4 cups chicken broth
Salt and pepper, to taste

Steps:

Soak dried chillies in hot water for 10 minutes, then blend into a paste.
In a pot, sauté onion, garlic, and ginger until fragrant.
Add in turmeric, coriander, and cumin powder, stirring until aromatic.
Pour in chicken broth and lemongrass, bringing to a boil.
Simmer for 20 minutes, then season with salt and pepper.
Strain the broth and serve with mee soto noodles, shredded chicken, and fresh herbs.
