Classic Vegetable Stew Recipe Slow Cooker

Ingredients:

Hearty Vegetable Stew (Vegan) (Slow Cooker Option)
Hearty Vegetable Stew (Vegan) (Slow Cooker Option)

2 carrots, diced
2 celery stalks, diced
1 onion, diced
2 cloves of garlic, minced
1 can of diced tomatoes
4 cups of vegetable broth
1 cup of green beans
1 cup of corn
1 cup of peas
Salt and pepper to taste

Steps:

Place all the diced vegetables, garlic, tomatoes, and vegetable broth in the slow cooker.
Cover and cook on low for 6-8 hours or on high for 3-4 hours.
Add in the green beans, corn, and peas during the last hour of cooking.
Season with salt and pepper to taste before serving.

Spicy Vegetable Stew Recipe Slow Cooker

Ingredients:

2 potatoes, diced
2 carrots, diced
1 onion, diced
2 cloves of garlic, minced
1 can of diced tomatoes with green chilies
4 cups of vegetable broth
1 cup of green peas
1 cup of diced bell peppers
1 tsp of cumin
1 tsp of paprika
Salt and pepper to taste

Steps:

Combine all the diced vegetables, garlic, tomatoes with green chilies, and vegetable broth in the slow cooker.
Sprinkle in the cumin and paprika, and season with salt and pepper.
Cover and cook on low for 6-8 hours or on high for 3-4 hours.
Stir in the peas and bell peppers during the last hour of cooking.
