Classic Upma Recipe

Ingredients:

1 cup semolina
2 tbsp oil
1 tsp mustard seeds
1 tsp cumin seeds
1 onion, finely chopped
1 green chili, chopped
1 carrot, grated
Salt to taste
2 cups water
Fresh coriander leaves for garnish

Steps:

Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.
Add chopped onion and green chili. Saute until onion turns translucent.
Add grated carrot and cook for a few minutes.
Add semolina and roast until it turns golden brown and aromatic.
Pour water slowly while stirring continuously to avoid lumps.
Cover and cook on low heat until the upma is cooked and water is absorbed.
Garnish with fresh coriander leaves and serve hot.

Upma with a Twist

Ingredients:

1 cup semolina
2 tbsp ghee
1 tsp fennel seeds
1 onion, thinly sliced
1/2 cup mixed vegetables (peas, carrots, beans)
1/4 cup roasted peanuts
Salt to taste
2 cups water
Juice of 1 lemon

Steps:

Heat ghee in a pan and add fennel seeds. Let them crackle.
Add sliced onion and saute until golden brown.
Add mixed vegetables and cook until they are tender.
Add semolina and roast until fragrant.
Pour water slowly while stirring to avoid lumps.
Add roasted peanuts, salt, and lemon juice. Mix well.
Cover and cook on low heat until upma is cooked through.
Serve hot with a sprinkle of fresh coriander leaves.
