Classic Chawanmushi Recipe Microwave

Ingredients:

– 2 eggs
– 1 cup dashi stock
– 1 tsp soy sauce
– 1/2 tsp mirin
– 1/2 tsp salt
– 1/2 cup assorted vegetables (such as mushrooms, peas, carrots)
– 4 shrimp, peeled and deveined
– 1/4 cup cooked chicken, shredded
– 1 green onion, thinly sliced

Steps:

1. In a mixing bowl, whisk together eggs, dashi stock, soy sauce, mirin, and salt until well combined.
2. Divide the assorted vegetables, shrimp, and chicken evenly among 4 microwave-safe chawanmushi cups.
3. Pour the egg mixture over the ingredients in each cup, filling them to the top.
4. Cover each cup with plastic wrap or a microwave-safe lid.
5. Microwave on high for 3-4 minutes, or until the chawanmushi is set and cooked through.
6. Garnish with sliced green onions before serving hot.

– 1/2 tsp sugar
– 1/2 cup cooked tofu, diced
– 1/4 cup corn kernels
– 4 shiitake mushrooms, thinly sliced
– 1 tbsp seaweed flakes

Steps:

1. In a mixing bowl, whisk together eggs, chicken broth, miso paste, sesame oil, and sugar until well combined.
2. Divide the tofu, corn kernels, mushrooms, and seaweed flakes evenly among 4 microwave-safe chawanmushi cups.
3. Pour the egg mixture over the ingredients in each cup, filling them to the top.
4. Cover each cup with plastic wrap or a microwave-safe lid.
5. Microwave on high for 3-4 minutes, or until the chawanmushi is set and cooked through.
