Classic Chicken Cashew Stir Fry

Ingredients:

– 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
– 1 cup cashew nuts
– 1 red bell pepper, sliced
– 1 yellow bell pepper, sliced
– 1 onion, sliced
– 2 cloves garlic, minced
– 1/4 cup soy sauce
– 2 tbsp hoisin sauce
– 1 tbsp sesame oil
– 1 tsp ginger, grated
– Salt and pepper to taste
– Green onions, for garnish

Instructions:

1. In a large skillet or wok, heat sesame oil over medium-high heat.
2. Add chicken pieces and cook until browned on all sides, about 5-7 minutes.
3. Add garlic, ginger, and onions to the skillet and cook until fragrant, about 2 minutes.
4. Stir in bell peppers and cook for an additional 3-4 minutes.
5. In a small bowl, mix together soy sauce and hoisin sauce. Pour over chicken and vegetables.
6. Add cashew nuts and stir to combine. Cook for another 2-3 minutes.

– 1 tbsp brown sugar
– Fresh cilantro, for garnish

Instructions:

1. In a large saucepan, heat coconut milk over medium heat.
2. Add red curry paste and stir until well combined.
3. Add chicken pieces and cook until browned on all sides, about 8-10 minutes.
4. Stir in garlic, onions, and bell peppers and cook for an additional 5 minutes.
5. Add fish sauce and brown sugar, stirring to combine.
6. Simmer for 10-15 minutes, until chicken is cooked through and vegetables are tender.
