Classic Lemon Curd Recipe

Ingredients:

Lemon curd tart
Lemon curd tart

4 large lemons
200g caster sugar
100g unsalted butter
3 large eggs

Steps:

Zest and juice the lemons.
In a heatproof bowl, whisk together the lemon zest, juice, sugar, and butter.
Place the bowl over a pot of simmering water, making sure the bottom of the bowl doesn’t touch the water.
Whisk the mixture until the sugar has dissolved and the butter has melted.
Add the eggs and continue to whisk until the mixture thickens, about 10-15 minutes.
Remove from heat and let cool before transferring to a sterilized jar.

Lemon Curd Tart

Ingredients:

1 pre-made tart shell
1 cup lemon curd
Fresh berries for garnish

Steps:

Preheat oven to 350°F.
Bake the tart shell according to package instructions and let cool.
Fill the tart shell with lemon curd and spread evenly.
Top with fresh berries and serve chilled.

Lemon Curd Pancakes

Ingredients:

1 cup all-purpose flour
1 tbsp sugar
1 tsp baking powder
1/2 tsp salt
1 cup milk
1 large egg
2 tbsp melted butter
Lemon curd, for topping

Steps:

In a bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, whisk together milk, egg, and melted butter.
Pour wet ingredients into dry ingredients and mix until just combined.
Heat a non-stick pan over medium heat and pour in pancake batter.
Cook until bubbles form on the surface, then flip and cook until golden brown.
Serve pancakes topped with lemon curd for a citrusy twist.
