Classic Chicken Fajitas

Ingredients:

Chicken fajitas
Chicken fajitas

2 boneless, skinless chicken breasts
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 onion, thinly sliced
2 cloves of garlic, minced
1 tsp chili powder
1 tsp cumin
1 tsp paprika
Salt and pepper to taste
1/4 cup olive oil
Flour tortillas

Instructions:

Season the chicken breasts with chili powder, cumin, paprika, salt, and pepper.
Heat olive oil in a skillet over medium-high heat and cook the chicken until browned on both sides, then remove from the skillet and set aside.
In the same skillet, add more olive oil if needed and sauté the bell peppers, onion, and garlic until softened.
Slice the chicken into strips and add back to the skillet with the vegetables, stirring to combine.
Warm the tortillas in a separate skillet or in the oven, then fill with the chicken and vegetable mixture.
Serve hot with your favorite toppings like salsa, guacamole, and sour cream.

Spicy Shrimp Fajitas

Ingredients:

1 lb shrimp, peeled and deveined
1 red onion, thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 jalapeño, minced
2 cloves of garlic, minced
1 tsp chili flakes
1 tsp smoked paprika
Salt and pepper to taste
1/4 cup olive oil
Corn tortillas

Instructions:

Season the shrimp with chili flakes, smoked paprika, salt, and pepper.
Heat olive oil in a skillet over medium-high heat and cook the shrimp until pink and cooked through, then remove from the skillet and set aside.
In the same skillet, add more olive oil if needed and sauté the onion, bell peppers, jalapeño, and garlic until softened.
Add the shrimp back to the skillet with the vegetables, stirring to combine.
Warm the corn tortillas in a separate skillet or in the oven, then fill with the shrimp and vegetable mixture.
Serve hot with your favorite toppings like avocado, cilantro, and lime wedges.
