Classic Pot Roast Beef

Ingredients:

3 lbs beef chuck roast
1 onion, chopped
4 cloves garlic, minced
2 cups beef broth
1 cup red wine
2 tbsp olive oil
Salt and pepper to taste
1 tsp dried thyme
1 tsp dried rosemary

Steps:

Season the beef chuck roast with salt, pepper, dried thyme, and dried rosemary.
Turn on the Instant Pot and select the Saute setting. Heat olive oil and sear the beef on all sides until browned.
Add onions and garlic to the pot and saute until fragrant.
Pour in beef broth and red wine, making sure to deglaze the bottom of the pot.
Close the lid and set the Instant Pot to Manual for 60 minutes.
Once cooking is done, release the pressure naturally for 10 minutes before quick releasing the rest.
Remove the roast from the pot and let it rest before slicing. Serve with the vegetables and sauce from the pot.

Asian-Inspired Roast Beef

Ingredients:

3 lbs beef sirloin roast
1/2 cup soy sauce
1/4 cup honey
2 tbsp ginger, minced
2 cloves garlic, minced
1 tsp sesame oil
1/4 cup water
Green onions and sesame seeds for garnish

Steps:

Cut the beef sirloin roast into strips and season with salt and pepper.
In a bowl, mix together soy sauce, honey, ginger, garlic, sesame oil, and water.
Place the beef strips in the Instant Pot and pour the sauce over them.
Close the lid and set the Instant Pot to Manual for 20 minutes.
Once cooking is done, do a quick release of the pressure.
Serve the Asian-inspired roast beef over rice and garnish with green onions and sesame seeds.
