Classic Vanilla Bean Ice Cream

Ingredients:

2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
1 vanilla bean, split and scraped
6 large egg yolks

Steps:

In a saucepan, combine the heavy cream, milk, sugar, and vanilla bean.
Heat over medium heat until just simmering, then remove from heat.
In a separate bowl, whisk the egg yolks until pale and creamy.
Slowly pour the hot cream mixture into the egg yolks, whisking constantly.
Return the mixture to the saucepan and cook over low heat, stirring constantly, until thickened.
Strain the mixture through a fine mesh sieve and chill in the refrigerator for at least 4 hours.
