1 cup dried split peas
1 onion, chopped
2 carrots, peeled and chopped
2 celery stalks, chopped
4 cups vegetable broth
1 teaspoon dried oregano
Salt and pepper to taste
2 tablespoons olive oil


In a large pot, heat olive oil over medium heat.
Add the chopped onion, carrots, and celery, and sauté until softened.
Rinse the dried split peas and add them to the pot.
Pour in the vegetable broth and bring to a boil.
Reduce heat to low, cover, and simmer for about 45 minutes or until the split peas are tender.
