Classic BBQ Pulled Pork

Ingredients:

Instant Pot BBQ Pulled Pork

3 lbs pork shoulder
1 cup BBQ sauce
1 cup chicken broth
1 onion, diced
2 cloves garlic, minced
1 tsp paprika
Salt and pepper to taste

Steps:

Season pork shoulder with salt, pepper, and paprika.
Place pork shoulder in instant pot and add diced onion and minced garlic.
Pour in BBQ sauce and chicken broth.
Cover instant pot and set to manual high pressure for 60 minutes.
Once done, let pressure release naturally for 10 minutes, then quick release remaining pressure.
Shred pork using two forks and mix with sauce in instant pot.
Serve on buns with coleslaw and extra BBQ sauce.

Korean BBQ Pulled Pork Tacos

Ingredients:

3 lbs pork shoulder
1/2 cup soy sauce
1/4 cup brown sugar
2 tbsp sesame oil
1 tbsp gochujang (Korean chili paste)
1 onion, sliced
3 cloves garlic, minced

Steps:

Season pork shoulder with salt and pepper.
Place pork shoulder in instant pot and add sliced onion and minced garlic.
In a bowl, mix soy sauce, brown sugar, sesame oil, and gochujang.
Pour sauce over pork in instant pot.
Cover instant pot and set to manual high pressure for 70 minutes.
Once done, let pressure release naturally for 10 minutes, then quick release remaining pressure.
Shred pork and serve in tortillas with kimchi, shredded cabbage, and a drizzle of sriracha mayo.

Pulled Pork Mac and Cheese

Ingredients:

3 lbs pork shoulder
1 lb macaroni pasta
3 cups shredded cheddar cheese
1 cup milk
1/2 cup BBQ sauce
1 onion, diced
2 cloves garlic, minced

Steps:

Season pork shoulder with salt and pepper.
Place pork shoulder in instant pot and add diced onion and minced garlic.
Pour in BBQ sauce and 1/2 cup water.
Cover instant pot and set to manual high pressure for 60 minutes.
Cook macaroni pasta according to package instructions.
Once pork is done, shred and set aside.
In a saucepan, heat milk and cheddar cheese until melted and smooth.
Combine cooked pasta, pulled pork, and cheese sauce in a baking dish.
Bake at 350°F for 20 minutes, or until bubbly and golden brown.
