Classic Shrimp Spring Rolls

Ingredients:

Chinese Spring Rolls (春卷), Deep-Fried or Air-Fried
Chinese Spring Rolls (春卷), Deep-Fried or Air-Fried

10 spring roll wrappers
1/2 pound cooked shrimp, peeled and deveined
1 cup shredded lettuce
1 cup shredded carrots
1/2 cup fresh mint leaves
1/4 cup rice vermicelli noodles, cooked
1/4 cup hoisin sauce
1/4 cup peanut sauce

Instructions:

Soak the spring roll wrappers in warm water until they are pliable, about 30 seconds.
Place a shrimp in the center of each wrapper, then top with lettuce, carrots, mint leaves, and a small handful of rice vermicelli noodles.
Roll up the wrappers, tucking in the sides as you go, to form a tight roll.
Serve the spring rolls with hoisin and peanut sauce for dipping.

Vegetarian Tofu Spring Rolls

Ingredients:

10 spring roll wrappers
1 block tofu, sliced into strips
1 cup shredded cabbage
1 cup shredded bell peppers
1/2 cup fresh cilantro leaves
1/4 cup soy sauce
1/4 cup sweet chili sauce

Instructions:

Prepare the spring roll wrappers as directed above.
Place a slice of tofu in the center of each wrapper, then top with cabbage, bell peppers, and cilantro.

Ingredients:

10 spring roll wrappers
1 cup shredded duck meat
1 cup shredded bok choy
1/2 cup shredded carrots
1/4 cup sliced green onions
1/4 cup hoisin sauce
1/4 cup plum sauce

Instructions:

Follow the instructions for preparing the spring roll wrappers.
Place duck meat in the center of each wrapper, then top with bok choy, carrots, and green onions.
