Classic Vegetarian Bak Chang

Ingredients:

Bak Zhang  素粽子 Glutinous Rice Dumplings
Bak Zhang 素粽子 Glutinous Rice Dumplings

Sticky rice
Dried shiitake mushrooms
Black fungus
Chestnuts
Dried tofu skin
Soy sauce
Sesame oil
Salt

Steps:

Soak the sticky rice in water for at least 4 hours.
Soak the dried shiitake mushrooms and black fungus in water until soft, then slice them thinly.
Cut the chestnuts into small pieces.
Cut the dried tofu skin into strips and soak in water until soft.
In a pan, heat some oil and sauté the mushrooms, black fungus, chestnuts, and tofu skin. Season with soy sauce, sesame oil, and salt to taste.
Drain the sticky rice and mix it with the sautéed ingredients.
Wrap the mixture in bamboo leaves and steam for about 2 hours.

Spicy Szechuan Vegetarian Bak Chang

Ingredients:

Sticky rice
Assorted vegetables (carrots, bell peppers, snow peas)
Spicy Szechuan sauce
Soy sauce
Sesame oil
Salt

Steps:

Prepare the sticky rice as in the classic recipe.
Cut the vegetables into small pieces.
In a pan, heat some oil and stir-fry the vegetables until slightly tender.
Add the spicy Szechuan sauce, soy sauce, sesame oil, and salt to taste.
Mix the sautéed vegetables with the sticky rice.
Wrap and steam as in the classic recipe.
