Grilled Portobello Mushroom Pasta

Ingredients:

2 large portobello mushrooms, cleaned and sliced
1/4 cup olive oil
4 cloves of garlic, minced
1 teaspoon dried thyme
Salt and pepper to taste
8 oz. pasta of your choice
1/2 cup grated Parmesan cheese

Instructions:

Preheat grill to medium-high heat.
In a bowl, mix together olive oil, garlic, thyme, salt, and pepper.
Brush both sides of the portobello mushroom slices with the olive oil mixture.
Grill the mushrooms for 4-5 minutes on each side, or until they are tender.
Cook pasta according to package instructions.
Once pasta is cooked, drain and toss with grilled portobello mushrooms.
Serve topped with Parmesan cheese.

Creamy Portobello Mushroom Alfredo Pasta

Ingredients:

2 large portobello mushrooms, cleaned and sliced
2 tablespoons butter
2 cloves of garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
8 oz. fettuccine pasta

Instructions:

Cook pasta according to package instructions.
In a large skillet, melt butter over medium heat.
Add garlic and cook until fragrant, about 1 minute.
Add sliced portobello mushrooms and cook until they are tender, about 5 minutes.
Pour in heavy cream and simmer for 5 minutes, stirring occasionally.
Stir in Parmesan cheese until melted and creamy.
Season with salt and pepper.
Add cooked pasta to the skillet and toss to coat in the sauce.
Serve hot with extra Parmesan cheese on top.
