1. Veggie-loaded Couscous Cups

Ingredients:

1 cup couscous
1 ½ cups vegetable broth
1 cup mixed veggies (peas, carrots, corn)
1/2 cup shredded cheese
1/4 cup breadcrumbs
1 egg, beaten
Salt and pepper to taste

Instructions:

Preheat the oven to 375°F and grease a muffin tin.
Cook couscous according to package instructions using vegetable broth instead of water.
In a bowl, mix cooked couscous, mixed veggies, cheese, breadcrumbs, egg, salt, and pepper.
Spoon mixture into muffin tin cups and bake for 20-25 minutes or until golden brown.
Let cool before serving to toddlers.

2. Fruit and Nut Couscous Salad

Ingredients:

1 cup couscous
1 ½ cups water
1/2 cup diced fruits (apples, grapes, berries)
1/4 cup chopped nuts (walnuts, almonds)
2 tbsp honey

Instructions:
