Vegetarian Goulash with Lentils and Sweet Potatoes

Ingredients:

– 1 cup green lentils
– 2 large sweet potatoes, diced
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 red bell pepper, diced
– 1 can diced tomatoes
– 4 cups vegetable broth
– 1 tsp paprika
– 1 tsp cumin
– Salt and pepper to taste
– Olive oil

Steps:

1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until onions are translucent.
2. Add sweet potatoes and red bell pepper, cook for 5 minutes.
3. Stir in lentils, diced tomatoes, vegetable broth, paprika, cumin, salt, and pepper.
4. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils and sweet potatoes are tender.
5. Adjust seasoning if necessary.

Vegetarian Goulash Stuffed Bell Peppers

– 4 large bell peppers
– 1 cup quinoa
– 1 can black beans, drained and rinsed
– 1 can corn, drained
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 can diced tomatoes
– 2 tsp chili powder
– 1 tsp cumin
– Salt and pepper to taste
– Shredded cheese (optional)

Steps:

1. Preheat oven to 375°F.
2. Cut the tops off of the bell peppers, remove seeds and membranes.
3. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until onions are translucent.
4. Stir in quinoa, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
5. Cook for 5-7 minutes, then spoon mixture into bell peppers.
6. Place stuffed bell peppers in a baking dish, cover with foil, and bake for 25-30 minutes.
7. Remove foil, sprinkle with shredded cheese, and bake for an additional 5 minutes until cheese is melted.
8. Serve hot and enjoy!
