Classic Vegetable Stew

Ingredients:

2 tbsp olive oil
1 onion, chopped
2 cloves of garlic, minced
2 carrots, sliced
2 celery stalks, chopped
1 red bell pepper, diced
1 can of diced tomatoes
4 cups vegetable broth
1 tsp dried thyme
Salt and pepper to taste

Instructions:

Heat olive oil in a large pot over medium heat.
Add onion and garlic, sauté until fragrant.
Add carrots, celery, and bell pepper, cook for about 5 minutes.
Pour in diced tomatoes and vegetable broth, bring to a boil.
Reduce heat, add thyme, salt, and pepper, simmer for 20 minutes.
