1. Classic Japanese Vegetable Curry

Ingredients:

– 2 potatoes, diced
– 2 carrots, sliced
– 1 onion, chopped
– 1 bell pepper, diced
– 1 cup frozen peas
– 2 tbsp Japanese curry powder
– 4 cups vegetable broth
– 1 tbsp soy sauce
– 1 tbsp mirin
– 1 tbsp sugar
