Classic Chicken Adobo

Ingredients:

2 lbs chicken thighs, cut into serving pieces
1/2 cup soy sauce
1/2 cup vinegar
4 cloves garlic, minced
1 onion, sliced
1 bay leaf
1 teaspoon peppercorns
1 tablespoon cooking oil

Instructions:

In a large bowl, marinate chicken in soy sauce and garlic for at least 30 minutes.
Heat oil in a pan over medium heat. Sauté onions until translucent.
Add marinated chicken and cook until browned.
Pour in vinegar, add bay leaf and peppercorns. Simmer for 30 minutes or until chicken is tender.
Serve hot with steamed rice.

Adobo Flakes Tacos

Ingredients:

Leftover chicken adobo, shredded
Corn tortillas
Shredded lettuce
Diced tomatoes
Sour cream
Chopped cilantro

Instructions:

Heat a non-stick pan over medium heat. Add shredded chicken adobo and cook until crispy.
Warm corn tortillas on a separate pan.
Assemble tacos with adobo flakes, lettuce, tomatoes, sour cream, and cilantro.
Serve hot and enjoy!
