Classic Kimchi Pancakes

Ingredients:

– 1 cup rice flour
– 1 cup water
– 1 cup chopped kimchi
– 1/2 cup chopped scallions
– 1/4 cup kimchi juice
– Salt to taste
– Vegetable oil for frying

Steps:

1. In a large mixing bowl, combine rice flour and water to make a smooth batter.
2. Add chopped kimchi, scallions, kimchi juice, and salt to the batter. Mix well.
3. Heat vegetable oil in a non-stick pan over medium heat.
4. Pour a ladleful of the pancake batter into the pan and spread it out evenly.
