Classic Brookie Recipe

Ingredients:

1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup chocolate chips

Instructions:

Preheat the oven to 350°F and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
In a separate bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the chocolate chips.
Using a cookie scoop, drop spoonfuls of dough onto the prepared baking sheet.
Bake for 10-12 minutes, or until the edges are set.
Allow the brookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Brookie Ice Cream Sandwiches

Ingredients:

Classic brookies (see recipe above)
Vanilla ice cream
Sprinkles or chocolate chips (optional)

Instructions:

Once the brookies have cooled completely, scoop a generous amount of vanilla ice cream onto the flat side of one brookie.
Top with another brookie, flat side down, to create a sandwich.
Roll the edges of the ice cream sandwich in sprinkles or chocolate chips, if desired.
Place the sandwiches in the freezer for at least 1 hour before serving.
