Classic Chicken Biryani Recipe

Ingredients:

2 cups basmati rice
1 lb chicken, cut into pieces
2 onions, thinly sliced
1/4 cup yogurt
2 tomatoes, chopped
2 tbsp biryani masala
1/4 cup ghee
1/4 cup oil
Salt to taste
Fried onions and cilantro for garnish

Steps:

Marinate the chicken in yogurt, biryani masala, and salt for at least 1 hour.
Heat ghee and oil in a large pot and fry the onions until golden brown.
Add the marinated chicken and cook until browned.
Layer the rice on top of the chicken and add water until the rice is covered.
Cover and cook on low heat until the rice is cooked through.
Garnish with fried onions and cilantro before serving.

Vegetable Biryani Recipe

Ingredients:

2 cups basmati rice
1 cup mixed vegetables (carrots, peas, potatoes)
1 onion, thinly sliced
1/4 cup yogurt
2 tomatoes, chopped
2 tbsp biryani masala
1/4 cup ghee
1/4 cup oil
Salt to taste
Fried onions and cilantro for garnish

Steps:

Parboil the vegetables and set aside.
Heat ghee and oil in a large pot and fry the onions until golden brown.
Add the vegetables, tomatoes, yogurt, biryani masala, and salt and cook for a few minutes.
Layer the rice on top of the vegetables and add water until the rice is covered.
Cover and cook on low heat until the rice is cooked through.
Garnish with fried onions and cilantro before serving.

Hyderabadi Dum Biryani Recipe

Ingredients:

2 cups basmati rice
1 lb mutton or lamb, cut into pieces
2 onions, thinly sliced
1/4 cup yogurt
2 tomatoes, chopped
2 tbsp biryani masala
1/4 cup ghee
1/4 cup oil
Salt to taste
Fried onions and cilantro for garnish

Steps:

Marinate the mutton in yogurt, biryani masala, and salt for at least 2 hours.
Heat ghee and oil in a large pot and fry the onions until golden brown.
Add the marinated mutton and cook until browned.
Layer the rice on top of the mutton and add water until the rice is covered.
Cover and cook on low heat until the rice is cooked through.
Garnish with fried onions and cilantro before serving.
